Mayonnaise in cake does sound goofy but that's what makes it fun. The cake doesn't taste like mayonnaise...just moist and chocolatey. The mayo just replaces the oil and some of the eggs in this recipe. .

I don't think I'd make a cake like this. I use, flour, sugar, cocoa, baking powder, baking soda, canola oil, vanilla extract, eggs, milk, and boiling water. I know that the mayonnaise works in a chocolate cake with good results. My grandmother made a cake like this one time, but the idea of it seems weird to me.

The mayo (made of eggs and oil) is the substitute for oil or butter in this recipe, plus there's an additional 3 eggs added to the batter. I know it sounds goofy but it works!

I've used sour cream before in cakes, but never mayonnaise. I think I am with your oldest son...it just doesn't sound right. Do you know what it is about mayonnaise that makes it a good condiment in cake??
