Hot and Smoky Baked Beans

Baked beans never meant much to me until I tried this recipe for Hot and Smoky Baked Beans. I’m not exagerating when I say these are AWESOME baked beans! I’ve tried other recipes but this is the one I always come back to. The beans have great smoky flavor from the bacon, barbecue sauce and chipotle chilies (and liquid smoke if you use it) and they’re not too sweet (like some baked beans). YUMM!!! Husband lights up like a Christmas tree when I tell him I’m making Hot & Smoky Baked Beans. Sometimes he even eats them instead of dessert. True story.

This recipe really does elevate the humble bean to a new place of honor. I like to use a variety of canned beans (kidney, pinto, black, great northern), and usually 1 to 2 chopped chipotle chilies depending on who I’m serving the beans to. Add a little chopped chipotle pepper and taste the mixture before adding more (a small amount of chipotle chilies goes a long way). A good-quality, smoke-flavored barbecue sauce is best in this recipe. I like D.L. Jardine’s Mesquite Barbecue Sauce. The beer adds a layer of flavor to the beans without making them taste beery. I use an Irish stout like Murphy’s or Guinness.  To add more smoky flavor, I usually add 1 tablespoon of liquid smoke. Parsley is a nice garnish but I don’t usually bother with it. Enjoy!!

Hot and Smoky Baked Beans

Serve these hot or at room temperature. Yield: Serves 8 to 10.

6 bacon slices
1 1/2 cups chopped onion
1 1/4 cups purchased barbecue sauce
3/4 cup dark beer
1/4 cup mild-flavored (light) molasses
3 tablespoons Dijon mustard
3 tablespoons (packed) dark brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
4 to 6 teaspoons minced canned chipotle chilies (I use 1-2 chipotle chilies, to taste)
6 15- to 16-ounce cans Great Northern beans, drained

Chopped fresh parsley

Preheat oven to 350°F. Cook bacon in large skillet over medium heat until crisp. Transfer to paper towels and drain. Transfer 2 1/2 tablespoons bacon drippings from skillet to large bowl. Finely chop bacon; add to bowl. Add onion and next 7 ingredients to bowl and whisk to blend. Whisk in 4 to 6 teaspoons chipotle chilies, depending on spiciness desired. Stir in beans. Transfer bean mixture to 13 x 9 x 2-inch glass baking dish. Bake uncovered until liquid bubbles and thickens slightly, about 1 hour. Cool 10 minutes.

Sprinkle with parsley and serve.

Satay Dip

If you like any kind of satay, you’re going to LOVE this dip!!! It’s easy to make and extremely versatile because it goes perfectly with a variety of foods: fresh veggies, summer rolls, or grilled shrimp, chicken and pork. When I first saw the list of ingredients, the 1/4 cup of ketchup threw me. But, hey, I trust Ina Garten so I gave it a go.

I followed the recipe, cooking the ingredients as stated then pureed the mixture in the food processor for a creamier texture. For another layer of flavor and a little kick, I added a few tablespoons of coconut milk and a little Thai chili sauce. One word: YUMM!!! This recipe requires very little effort but delivers loads of flavor. Serve it at your next party and I guarantee you’ll get asked for the recipe. Enjoy!!

Satay Dip
-recipe from The Barefoot Contessa Cookbook by Ina Garten

1 tablespoon good olive oil
1 tablespoon dark sesame oil
2/3 cup small-diced red onion (1 small onion)
1 1/2 teaspoons minced garlic (2 cloves)
1 1/2 teaspoons minced fresh ginger root
1/4 teaspoon crushed red pepper flakes
2 tablespoons good red wine vinegar
1/4 cup light brown sugar, packed
2 tablespoons soy sauce
1/2 cup smooth peanut butter
1/4 cup ketchup
2 tablespoons dry sherry
1 1/2 teaspoons freshly squeezed lime juice

Cook the olive oil, sesame oil, red onion, garlic, ginger root, and red pepper flakes in a small, heavy-bottomed pot on medium heat until the onion is transparent, 10 to 15 minutes. Whisk in the vinegar, brown sugar, soy sauce, peanut butter, ketchup, sherry, and lime juice; cook for 1 more minute. Cool and serve. Can be stored in the refrigerator for a month. Yield: 1 1/2 cups

Strawberry Shortcake for a crowd

I love shortcake desserts! You pretty much can’t go wrong with a lightly sweetened biscuit (or in this case, cake) topped with fresh fruit and freshly whipped cream. YUMM! This recipe for Strawberry Shortcake is from Emeril’s Potluck Cookbookand is a perfect way to feed shortcake to a crowd. The sturdy sponge cake stands up nicely to the fruit and it’s juices…and it’s really pretty!

This dessert is best when served shortly after it’s made so if you need something made the day before an event (or even earlier in the day), find a different dessert. You can make the cake a day in advance, and prepare the strawberries and whip the cream (seperately) then assemble the dessert shortly before serving. The longer the dessert sits, however, the higher the risk of having mushy cake. If you don’t want to serve the shortcake in a bowl, you can also layer the berries and cream over the whole cake or just cut pieces of cake and pile the berries and cream on each serving. It’s not rocket science so you can make it how you want it.

Recipe changes I made: For the strawberries, I used less sugar and substituted some orange juice for the Grand Marnier (I didn’t want the pregnant ladies to get liquored up). Also, I added a teaspoon or so of vanilla to the cake.

Strawberry Shortcake

Ingredients
1 cup (2 sticks) unsalted butter, melted and slightly cooled, plus 2 teaspoons, softened
6 large eggs, at room temperature
2 tablespoons milk, at room temperature
3 1/3 cups granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3 pounds strawberries, rinsed, hulled, and sliced
1/2 cup orange-flavored liqueur, plus a little more for drizzling (recommended: Grand Marnier)
1 1/2 teaspoons orange zest
2 1/2 cups heavy cream
5 tablespoons confectioners’ sugar
1 1/2 teaspoons vanilla extract
Directions
Preheat the oven to 375 degrees F and grease a 9 by 13-inch glass casserole with the 2 teaspoons of butter and set aside.

Combine the eggs and milk in a large bowl and beat with an electric mixer until frothy. Add 1 1/3 cups of the sugar and continue to beat at high speed until the mixture is quite thick and pale yellow, about 7 to 10 minutes.

Sift together the flour, baking powder, and salt in a medium bowl. Fold this mixture gently into the egg mixture. Gently stir in the melted butter and then transfer the batter to the prepared baking pan and bake in the center of the oven until risen and golden brown, about 30 minutes. Remove from the oven and let cool on a wire rack before proceeding.

Make the strawberry topping by combining the strawberries, remaining 2 cups sugar, 1/2 cup orange liqueur, and orange zest in a large bowl and tossing to combine. Let sit at room temperature for 15 minutes, stirring occasionally, until all sugar is dissolved. Refrigerate, covered, until ready to assemble the dessert.

Make the whipped cream by combining the heavy cream with the confectioners’ sugar in a large bowl and beating with an electric mixer or whisk until slightly thickened. Add the vanilla and continue to beat until the mixture nearly forms stiff peaks.

When ready to assemble the dessert, poke holes all over the cake using a cake tester or toothpick. Drizzle cake with a little orange liqueur. Cut the cake into 1 1/2-inch cubes and place half of the cake cubes on the bottom of a deep-sided dessert bowl. Add half of the strawberry mixture over the top of the cake cubes, juices and all, spreading strawberries evenly with a spatula and allowing the juices to absorb into the cake. Top with the remaining cake cubes and then the remaining strawberries. Top with the whipped cream and serve immediately or refrigerate for up to 1 hour in advance before serving.

Dark Chocolate Cupcakes

A friend recently requested chocolate cupcakes with coconut frosting for her birthday treat. She was very specific; she wanted a bite-sized dessert that would taste like a Mounds candy bar. After doing a recipe search and not finding exactly what I was looking for, I decided to wing it. Since I wanted a moist and very chocolatey cupcake, I went with a recipe for Dark Chocolate Cupcakes that I’ve had great results with. The batter is made with sour cream and two kinds of chocolate (bittersweet and cocoa powder). Yumm!

I made a basic cream cheese frosting and flavored it with a little coconut extract, vanilla and sweetened shredded coconut. I mounded a blob of icing onto each cooled cupcake, swirling it around to make it look pretty then garnished it with a bit more shredded coconut. The result was a perfect Mounds Cupcake. My friend was so excited when she saw them, and even more excited once she took a bite.

These delicious dark chocolate cupcakes go great with a variety of frostings, such as cream cheese, vanilla, or berry (strawberry, raspberry). Enjoy!!!

Dark Chocolate Cupcakes
-recipe from Cook’s Illustrated (March 1, 2005)

This recipe does not double very well. Cupcakes made from a doubled batch and baked side by side in the oven yield a slightly compromised rise. It’s best to make two separate batches and bake each separately. Store leftover cupcakes (frosted or unfrosted) in the refrigerator, but let them come to room temperature before serving.

Makes 12 cupcakes. 

 8 tablespoons unsalted butter, cut into 4 pieces
2 ounces bittersweet chocolate, chopped
1/2 cup Dutch-processed cocoa (1 1/2 ounces)
3/4 cup unbleached all-purpose flour (3 3/4 ounces)
1/2 teaspoon baking soda 
3/4 teaspoon baking powder 
2 large eggs 
3/4 cup sugar (5 1/4 ounces)
1 teaspoon vanilla extract 
1/2 teaspoon table salt 
1/2 cup sour cream (4 ounces)

Adjust oven rack to lower-middle position; heat oven to 350 degrees. Line standard-sized muffin pan (cups have 1/2-cup capacity) with baking-cup liners.

Combine butter, chocolate, and cocoa in medium heatproof bowl. Set bowl over saucepan containing barely simmering water; heat mixture until butter and chocolate are melted and whisk until smooth and combined. Set aside to cool until just warm to the touch.

Whisk flour, baking soda, and baking powder in small bowl to combine.

Whisk eggs in second medium bowl to combine; add sugar, vanilla, and salt and whisk until fully incorporated. Add cooled chocolate mixture and whisk until combined. Sift about one-third of flour mixture over chocolate mixture and whisk until combined; whisk in sour cream until combined, then sift remaining flour mixture over and whisk until batter is homogenous and thick.

Divide batter evenly among muffin pan cups. Bake until skewer inserted into center of cupcakes comes out clean, 18 to 20 minutes.

Cool cupcakes in muffin pan on wire rack until cool enough to handle, about 15 minutes. Carefully lift each cupcake from muffin pan and set on wire rack. Cool to room temperature before icing, about 30 minutes. (To frost: Mound about 2 tablespoons icing on center of each cupcake. Using small icing spatula or butter knife, spread icing to edge of cupcake, leaving slight mound in center.)

Mango and Avocado Salsa

This salsa rocks! It’s easy to make and can be served with tortilla chips or as a topping for grilled chicken, pork or seafood. YUMM! Husband was skeptical of the mango/avocade combo at first but after his first bite, he was blown away by all the flavor. He then kept commenting on how good it was. I served the chunky salsa liberally spooned over slices of grilled pork tenderloin that had been marinated in a combo of olive oil, orange juice, garlic, red wine vinegar, smoked paprika, cumin and salt/pepper. Delicious!

The only thing I did differently from the recipe was substitute 1/2 a seeded jalapeno for the habanero chile. Next time, I start with less salt then add if needed. The amount of seasoning will depend on the size of avocado and mango being used.

If serving the Mango and Avocado Salsa for company, you’ll probably want to double or triple the recipe because it will disappear quickly! After you make it, let me know how you served it. Enjoy!!!

Note: Always use caution when seeding spicy chiles like habaneros and jalapenos. The seeds and veins inside the chiles can cause skin irritation. There’s lots of info on the web about seeing chiles if you’re not sure.

Mango and Avocado Salsa
-recipe from Martha Stewart Everyday Food

1 avocado, halved, pitted, peeled, and diced medium
1 ripe mango, peeled, pitted, and diced medium
1 small red onion, diced small
1/4 cup finely chopped fresh cilantro leaves
1/2 to 1 habanero chile (stem and seeds removed), minced
2 tablespoons fresh lime juice
1 tablespoon extra-virgin olive oil
1/2 teaspoon coarse salt

In a bowl, combine all ingredients. Makes 3 cups.

Get to grilling!

With Summer and Father’s Day almost upon us, I thought I’d recommend a few grilling cookbooks that I use frequently. Any of these cookbooks would make a great gift for the Grill Master or the Father in your life, or buy them for yourself (like I did)!

Weber’s Real Grilling by Jamie Purviance
This cookbook is filled with over 200 original recipes (each with a color photo) that were inspired by grilled foods all over the world. The recipes are easy and delicious, such as Filet Mignon with Lemon-Parsley Butter, Jerk Pork Tenderloin with Glazed Sweet Potatoes, Cedar-Planked Salmon with Honey-Lime dressing, Smoky Sweet Baked Beans and many more.

Williams-Sonoma Essentials of Grilling
More than 130 recipes from around the world (each with a photo), like Carne Asada with Blackened Corn, Hickory Grill-Smoked Chicken, Cilantro Pesto Shrimp, Mixed Grill of Summer Vegetables, etc. This is a beautiful cookbook!

BBQ USA by Steven Raichlen
This cookbook has 425 recipes from all across America. There are black and white photos throughout the cookbook but none of the individual recipes. Here’s a smattering of some of the recipes: Big Easy Barbecued Turkey, Tangerine Teriyaki Chicken, Cincinnati Chili Dogs, Apple City Championship Ribs, Santa Maria Tri-Tip with All the Fixin’s, Grilled Caesar Salad, Charred Vegetable Salsa, and the list goes on and on.

Indonesian Grilled Swordfish

I cooked swordfish last night for the first time in ages. I was recently flipping through Ina Garten’s Barefoot Contessa Back to Basics cookbookwhen I came across her recipe for Indonesian Grilled Swordfish. I had heard good things about her Indonesian Chicken recipe so I decided to give the swordfish version a try. Boy, am I glad I did! The ginger-lemon-soy marinade gives the firm fish a wonderful flavor…the whole family liked it.

I let the swordfish marinate for about 6 hours before I grilled it. I served the fish with steamed rice and grilled yellow summer squash (marinated in a little olive oil, sesame oil, soy sauce and rice vinegar). Yumm!

Indonesian Grilled Swordfish
-recipe from Barefoot Contessa Back to Basics by Ina Garten

Makes 6 servings.

1/3 cup soy sauce
1/4 cup canola or peanut oil, plus extra for brushing on the grill
2 teaspoons grated lemon zest (2 lemons)
1/4 cup freshly squeezed lemon juice
1/4 cup minced or finely chopped ginger root
2 tablespoons minced garlic (4 cloves)
2 tablespoons Dijon mustard
6 (8-ounce, 1-inch thick) swordfish steaks
Kosher salt

Combine the soy sauce, canola oil, lemon zest, lemon juice, ginger root, garlic, and mustard in a bowl. Pour half the sauce in a low flat dish that’s just large enough to hold the swordfish in one layer. Place the swordfish on top of the sauce and spread the remaining sauce on top. Cover with plastic wrap and refrigerate for at least 4 hours or preferably overnight.

Thirty minutes before you’re ready to serve, build a charcoal fire or preheat a gas grill.

When the coals are medium-hot, brush the cooking grate with oil to prevent the fish from sticking. Remove the fish from the marinade, allowing some of the ginger to cling to the fish, and discard the marinade. Sprinkle the fish generously on both sides with salt and place it over the coals. Cook for 5 minutes on each side, just until it’s no longer pink in the middle. Place on a platter, cover tightly with aluminum foil, and allow to rest for 10 to 15 minutes. Serve hot or warm.

Fresh Strawberry Syrup

Recently, I bought one of those mongo 6 pound packages of fresh strawberries to use for strawberry shortcake. After making the shortcake, however, I still had 2 pounds of the precious berries. Not wanting the leftover berries to go to waste, I decided to make some strawberry syrup. Not only is it easy to make, but it’s way better than store bought berry syrup and can be used in a variety of ways. For instance, a topping for pancakes or waffles, mixed with plain yogurt, stirred into hot oatmeal, added to club soda or lemonade for a refreshing drink, etc. 

Watch the heat on the boiling berries. I was multitasking while I made the syrup and ended up with a strawberry mess all over my stove. Good times!

Strawberry Syrup
-Recipe from Bon Appétit Magazine

1 pound sliced hulled strawberries
1/2 cup water
1/2 cup sugar
1/3 cup corn syrup
Pinch of salt
2 tablespoons lemon juice

Bring strawberries, water, sugar, corn syrup, and salt to boil in large saucepan over medium-high heat, stirring until sugar dissolves. Boil uncovered 10 minutes, stirring occasionally and adjusting heat to prevent mixture from boiling over. Add lemon juice. Strain, pressing on solids. Cover and chill syrup. DO AHEAD Can be made 1 week ahead. Keep chilled.

Spicy Beef with Peanuts & Chiles

This delicious beef stir-fry dish is everything I was hoping it would be! You get great flavor from the peanuts, soy sauce, fish sauce and lime juice, and a nice kick from the chiles. Yumm!  

Changes I made to the recipe: I doubled the cilantro and omitted the basil, substituted red onion for the shallot, and substituted flatiron steak for the flank steak. Cut back on the chile if you don’t like spicy food.

Serve the stir-fry with an Asian-inspired salad and steamed rice and you’ve got a great dinner in a flash!

Spicy Beef with Peanuts & Chiles

Serves four. 

1 lb. flank steak, thinly sliced on the diagonal against the grain
2 Tbs. soy sauce
2 tsp. fish sauce
1/4 tsp. kosher salt; more to taste
2 Tbs. fresh lime juice
1 Tbs. light brown sugar
1/4 cup salted peanuts
2 large shallots, coarsely chopped
2 Thai or serrano chiles, stemmed and coarsely chopped (don’t seed)
3 Tbs. canola or peanut oil
1/3 cup coarsely chopped fresh cilantro
3 Tbs. chopped fresh basil

Toss the steak with 1 Tbs. of the soy sauce, 1 tsp. of the fish sauce, and the salt. Combine the remaining 1 Tbs. soy sauce and 1 tsp. fish sauce with 1 Tbs. of the lime juice and the brown sugar and set aside.

Pulse the peanuts, shallots, and chiles in a food processor until finely chopped. Transfer to a small bowl.

Set a 12-inch skillet over medium-high heat until hot, about 1 minute. Add 1-1/2 Tbs. of the oil and once it’s shimmering, add the beef. Cook, stirring, until the beef just loses its raw appearance, about 2 minutes. Transfer to a plate.

Reduce the heat to medium, add the remaining 1-1/2 Tbs. oil and the shallot mixture, sprinkle with salt, and cook, stirring, until the shallots are soft, about 2 minutes.

Return the beef to the pan. Stir the soy mixture and add it, along with half of the cilantro and basil, and cook, stirring to let the flavors meld, 2 minutes. Season to taste with salt and serve sprinkled with the remaining lime juice, cilantro, and basil.
